Our ancient Mexican cuisine was originally plant based. In Mexico we still keep our traditions and many of our dishes are plant based, such as Calabacitas rellenas de queso panela – Mexican squash stuffed with panela cheese in tomato sauce. This is one of my favorite recipes from my grandma and the only way I could eat calabacitas. In every Mexican home this dish is a favorite because of its healthy benefits and also it’s easy to prepare.

You may find the Mexican squash in your favorite Mexican market. They are available most part of the year.

Crema poblano
Cream of Poblano

We will also make Crema de chile poblano – cream of poblano pepper is a velvety soup made from poblano peppers. It has a light zesty flavor and it is so smooth to the palate.

This cream of poblano soup is exceptional. The soup is beautiful. It can be as spicy as you want. It is hearty enough to make a meal or can be a first course.

There are soups and then there are soups.

In this 3 hour class we will make these two fabulous dishes and we will pair the Mexican squash with white Mexican rice and fried plantains!
